Crunchy, chocolatey, olive oil and maple granola, packed with nuts and seeds. This homemade granola needs just a few minutes of mixing before the oven does the rest.

Ingredients

  • 150g rolled oats
  • 25g almonds, roughly chopped
  • 25g pecans or walnuts, roughly chopped
  • 25g hazelnuts, roughly chopped
  • 20g sunflower seeds
  • 10g flaxseeds
  • 10g chia seeds
  • 20g pumpkin seeds
  • 2 tbsp cocoa powder
  • A pinch of sea salt
  • 1 tsp vanilla extract, optional
  • 50g maple syrup
  • 50ml CLYR

Instructions

  1. Heat the Oven: Preheat the oven to 150°C conventional. Line a large baking tray with baking paper.
  2. Mix the Dry Ingredients: Add the oats, chopped nuts, sunflower seeds, flaxseeds, pumpkin seeds, cocoa powder and salt to a large bowl. Mix well.
  3. Add the Wet Ingredients: Pour in the maple syrup, CLYR and vanilla, if using. Stir until everything is evenly coated.
  4. Spread It Out: Transfer the mixture to the prepared tray and spread it into an even layer. Press it down lightly with the back of a spoon to help clusters form.
  5. Bake: Bake for approximately 35 minutes, gently stirring once halfway through. Keep an eye on the nuts towards the end so they do not burn.
  6. Let It Cool: Leave the granola to cool completely on the tray. It will become crisp as it cools.
  7. Store: Break it into clusters and store in an airtight container.
